How would you handle a Discord appeal?:
I would review the user's appeal and log, as well as contact the staff member to get their side of the story. Then I would consider both sides and determine if the user's apology and/or provided evidence is sufficient to lower or remove the punishment.

Explain some of the administrative features of Discord and when they're used appropriately:

Warn is for warning a user not to do or say a thing again that is against server rules.

Ban is for banning a user that is continuously or severly breaking server rules.

Kick is for removing a user from the discord, but still allow them to rejoin once the user has, for example, changed name or profile picture to something that does not break server rules.

Mute is for muting a user in text/voice channels. This will make them unable to say anything for the specified amount of time.

What would I do different with my new powers?:
I would be able to give newly promoted server staff their ranks for when they are to be trained. If discord head admin is like the head admin ranks on the game servers, I would be able to remove/edit appealed or misplaced punishments.
