Altair did not start the whole thing the creed was around long before him we started the story from Altair and he gave the assassin feel because he had nothing to cloud his judgement he followed the creed and didn't let anything stand in the way for the good of the creed.
Ezio had family and revenge in the forefront of his mind thus clouding his judgement and leading to the young cocky assassin we all loved to play.

Altair started cocky then lost his master assassin rank and went back to novice and had 9 lifes to redeem his master assassin rank back which he got he adjusted the blade that ezio wearied so you would not have to chop of your ring finger and he did make the brother hood stronger! Altair pain what made him into the greatest assassin his parents died when he was young he lost his master assassin rank his best friend father killed his parents then killed himself in front of altair he had to fight and kill his mentor when he went corrupt when he held the apple of eden all this and emotian made him the greatest assassin that has ever lived thats why he did not become corrupt when holding the apple of eden he locked himself up and stayed there intell he died no food or water just protecting the apple so no one could get it in his library A.K.A a vault!

so as i put it (badly) his emotional torment did not cloud his judgement and he followed the creed hence why he locked himself up to protect something that the world should never have or know of.
