I wouldn't say Diamond Is Unbreakable (season 4) is boring, at least not the part with Yoshikage Kira because the Requiem (with Bites The Dust for Killer Queen) adds something new to the Stands.
For the season 1 and 2 I agree it was awesome, even tho the season 1 just introduce what is Dio.
Stardust Crusaders (season 3) may be boring idk I did find it nice especially the part in Egypt (D'Arby The Gambler, Dio, etc...). And the season 5 is probably my favourite with Stardust Crusaders.

If you want to start JoJo you should just start with the season 1, it basically introduce the story behing JoJo and who is Dio (which is a name you will often see). Then just continue in the order. But in the case you want to skip seasons to see Stands fighting each other you should definitly start with Stardust Crusaders because it introduce what is a Stand (if you don't you could get problems like "wtf is happening there"). Then you can watch it as you want because you already know everything you need to know (at least what is important, there will be some stuff that you've never heard of but you can still follow the story).
