I do see issues with giving knives to all roles, the knife is known mostly as a traitor weapon so new users could easily get confused if the innocent role all had knives as well. The skins for knives would defiantly be a welcome addition and would fit very well into the current unlock system. Oh and nerf the T knife its dumb.
