The servers are more than fine, they had a few outages, but no more than 5 minutes max and its understandable considering it's offering free servers to absolutely everyone
Dumbed down settings?? I don't think there's anything wrong with the settings, the UI looks looks fresh, the settings are organized, not sure what you find "dumbed" down
Audio quality is great, and you can choose your own bitrate for your channel.
You don't really need sub channels.

Wtf are you talking about? The servers are fine, maybe your internet is garbage, the settings are organised and easy to manoeuvre through, the audio quality is good.

The issues are probably on your side
