For example, thats out of context but, at the moment (in France) welders are very claimed and well paid (~1800€ - 3200€ / months).
Damn thats pretty good pay, ive been welding for about a year now and ill be lucky to find something that pays that well when I finish my apprenticeship.

I mean, it's completely up to you.

My first choice would be artificial intelligence. It is definitely going to be useful in a couple of years, especially since companies will be looking for people experienced within A.I to work on big projects like self-driving cars and other projects that require artificial intelligence. The salary for someone working with A.I would be quite high too because of the popularity and demand. However, I suggest not working for the money (at least not entirely), and rather focus on something that you enjoy and has a reasonable salary.

On the other hand, bioinformatics is something that I would definitely consider important and something that can be fun as well. Bioinformatics basically includes math, biology, statistics and computer science all in one. So if you're interested in biology and computer science I have a feeling you're going to like this. People with experience in bioinformatics are definitely needed to some extent and will probably still be needed in the near future. Development of software tools for understanding of biological data is definitely something you should consider. I'm not that educated on the salary of someone that works with such software, but I would assume it's quite decent.

While I can't give you an exact answer I think these options are definitely the most interesting ones in my opinion, but I think you should try to extrapolate your own opinion from my arguments instead of choosing what I, or anyone else, thinks is the best. I think it's important that you do something you enjoy and something that you won't regret in the future. Also, I don't know an entire lot about cyber security other than the basics of the study. Hence why I didn't write about it, but looking at other replies, it looks like a viable option to me.

Good luck on finding what is best for you!

I sometimes question your staffing ability for example:
When in game your were shouting "jugger". I asked you what it meant and you said it is a Canadian word for the n-word

If you want staff again you really need to get your act together.
