Since the only adaptation of the Fate Route is the butchered Fate/stay night 2006 by DEEN, I suggest you don't watch it. It only serves as an introduction, but
based ufotable gave us a similar introduction in their adaptation of the Unlimited Blade Works route, so that should be the first thing you watch. After that, you should either wait till the Heaven's Feel movies are released, or alternatively read the Visual Novel. Heaven's Feel is, like UBW, a pretty long route, and while the pacing might be quite slow at times, it's worth the read.
After you've finished Heaven's Feel, you should move on to Fate/Zero, which details the 4th Holy Grail War, the one before the war of Fate/stay night. Unlike F/SN, it doesn't follow routes, as it's a Light Novel, not a Visual Novel, so you can either watch or read it without too many problems.
After that, you're free to basically watch whatever of the Fate franchise. Fate/Hollow Atarexia is the sequel to Fate/stay night, but I myself have not read it yet, so I can't tell you what it's about. I have however heard that the English patch is rather... horrendous. Fate/Kaleid is a fun watch, but do note that it has Yuri undertones, especially in the second season. I know absolutely nothing of Fate/Extra, Fate/Strange or anything else, but having seen Fate/stay night and Fate/Zero as the base, you should be able to watch/read anything without any problems.
I also suggest you watch Carnival Phantasm if you're interested in more of TYPE-Moon's works. It's a parody-comedy show with characters from Fate/stay night and Tsukihime, another Visual Novel, which also received a butchered Anime, or atleast that's what I've heard. Since about 3/4 of the jokes are with the Fate/stay night cast, you'll probably enjoy it regardless. Oh, and it's an Anime! No more reading! Yay!
EDIT: If you don't like the more mature, "adult" scenes *cough cough*, read/watch a playthrough of Fate/stay night [Realta Nua] instead of the original Fate/stay night. They removed those scenes, but do note that this leaves a couple of plotholes and actually ruins parts of one of the characters who gets a spotlight in the Heaven's Feel route. It's up to you to decide, though. Fate/stay night is quite fucked-up if you get deep into it.
